🐣 Easter Special: Carrots Stuffed with Feta

Try something new for Easter brunch! How about these feta carrots, which not only taste heavenly but also look as sweet as candy?

Ingredients:

  • Puff Pastry
  • 1 teaspoon olive oil
  • 3 teaspoons of water
  • 1 teaspoon paprika
  • Paprika powder

Feta and Carrot Filling:

  • 2 carrots
  • 200 g feta
  • 150 g cream cheese
  • Lemon juice
  • Feta Love Spice

Decorations:

  • Carrot tops


Preparation:

  1. Preheat the oven & prepare the puff pastry
    Preheat the oven to 200 °C (top and bottom heat). Cut the puff pastry into 6 long strips.
  2. Cut and shape the parchment paper
    Prepare a 10 x 20 cm piece of parchment paper for each carrot. Roll these into small cones shaped like ice cream cones. Save the remaining parchment paper.
  3. Roll out and prepare the puff pastry
    Wrap the strips of puff pastry around the paper baking bags. Then place them on a baking rack lined with parchment paper.
  4. Brush & Bake
    Mix together the water, oil, and paprika, then brush the puff pastry carrots with the mixture. Stuff them with the reserved pieces of parchment paper so they keep their shape. Bake in the oven for 15–20 minutes.
  5. Prepare the filling
    While the carrots are baking, puree all the ingredients for the filling.
  6. Filling & Decorating
    Let the puff pastry carrots cool after baking. Then pipe the filling inside using a pastry bag and decorate them creatively—for example, with carrot tops or parsley.
