Ingredients (for 4 servings)
- 300 g quinoa
- 1 avocado
- 200 g cherry tomatoes
- 1 cucumber
- 100 g chickpeas (canned)
- 5 tablespoons olive oil
- 2 tablespoons apple cider vinegar
- 1 tsp Summer Salad Seasoning Mix
Preparation
- Cook the quinoa according to the package directions and let it cool.
- Cut the tomatoes in half, dice the cucumber, and slice the avocado.
- Rinse the chickpeas and let them drain.
- Mix together the olive oil and vinegar to make a dressing, then toss with the summer salad.
