Eggplant Pizzas

These eggplant pizzas are quick and easy to make. These low-carb pizzas are also real showstoppers on the grill!

Ingredients for 4 servings:

  • 2 eggplants
  • small tomatoes
  • 200 g mozzarella cheese
  • 200 g Gouda cheese
  • 4 tablespoons olive oil
  • Veggie Talent

Preparation:

  1. Slice the eggplants and brush them with olive oil.
  2. Cut the tomatoes into pieces and top the eggplants with them.
  3. Place it in an aluminum foil tray and put it on the grill for 15 minutes.
  4. Finally, top with cheese, let it melt, and garnish with Veggie Talent!
