These eggplant pizzas are quick and easy to make. These low-carb pizzas are also real showstoppers on the grill!
Ingredients for 4 servings:
- 2 eggplants
- small tomatoes
- 200 g mozzarella cheese
- 200 g Gouda cheese
- 4 tablespoons olive oil
- Veggie Talent
Preparation:
- Slice the eggplants and brush them with olive oil.
- Cut the tomatoes into pieces and top the eggplants with them.
- Place it in an aluminum foil tray and put it on the grill for 15 minutes.
- Finally, top with cheese, let it melt, and garnish with Veggie Talent!
