Broccoli Fritters with Herb Dip

Crispy, flavorful, and packed with nutrients—our Broccoli Fritters with a Creamy Herb Dip are the perfect recipe for a quick lunch or for meal prep for your lunchbox. 🌱✨ 

Thanks to fresh dill, green onions, and our herb dip seasoning, these pancakes have a wonderfully aromatic flavor. And best of all: they’re super easy to make, can be made gluten-free if you prefer—and, of course, are perfect for the whole family. Served with a fresh herb dip, they’re guaranteed to become your new favorite dish! 🥦

 

Ingredients for 12 pieces:

  • 350g broccoli
  • 1 handful of fresh dill, finely chopped
  • 2 spring onions, finely chopped
  • 2 cloves of garlic, peeled and finely chopped
  • 2 tablespoons mustard
  • 2 tablespoons maple syrup
  • Juice from 1/2 lemon
  • 2 tsp "Besser im Glas" Herb Dip for seasoning
  • 40 g chickpea flour
  • 30 g wheat flour or buckwheat flour (for a gluten-free version)
  • 75 ml water
  • Oil for frying


For the dip

 

Preparation:

  1. Cut the broccoli florets off the stem and chop them very finely, or pulse them briefly in a food processor.

  2. Place the broccoli in a large bowl and add mustard, dill, green onions, garlic, and a generous amount of our herb dip seasoning.

  3. In a small bowl, mix the chickpea flour, wheat flour, and water until you have a smooth batter.

  4. Pour the batter over the broccoli mixture and mix well.

  5. Divide the mixture into 12 equal portions, squeeze each portion in your hand, and shape it into a patty. Place them on a plate.

  6. Bake in the oven at 180 degrees for about 30 minutes, until they are lightly browned.

  7. Let them cool so they firm up, then serve them with the homemade herb dip made from yogurt, honey, and our herb dip seasoning.
