Amazing and delicious! This summer edition of the Middle Eastern salad is a must-have at any barbecue! It’s quick to prepare and everyone loves it.
Ingredients for 4 servings:
For the salad:
- 250g bulgur
- 1 small onion
- 1 clove of garlic
- 1 red bell pepper
- 1 bowl of cherry tomatoes
- fresh parsley
- 200 g feta
- Pomegranate seeds
For the dressing:
- 4 tablespoons ajvar
- 2 tablespoons tomato paste
- 2 tablespoons olive oil
- 5 tablespoons of vinegar
- 3 tsp Feta Love
Preparation:
- Prepare the bulgur according to the package directions. Finely chop the onion, garlic, bell pepper, and parsley.
- Pour olive oil into a pan and sauté the diced onion, garlic, and bell pepper briefly until the bell pepper is tender but still slightly crunchy.
- Mix the bulgur with the ajvar, tomato paste, the steamed vegetables, vinegar, and parsley, and let it cool to room temperature.
- Serve immediately or let it sit in the refrigerator overnight. If you're serving it right away, add the chopped cherry tomatoes, crumbled feta & "Feta Liebe" seasoning, pomegranate seeds, and lettuce just before serving, and mix everything well.
