Bulgur and Feta Salad

Amazing and delicious! This summer edition of the Middle Eastern salad is a must-have at any barbecue! It’s quick to prepare and everyone loves it.

 

Ingredients for 4 servings:

For the salad:

  • 250g bulgur
  • 1 small onion
  • 1 clove of garlic
  • 1 red bell pepper
  • 1 bowl of cherry tomatoes
  • fresh parsley
  • 200 g feta
  • Pomegranate seeds

For the dressing:

  • 4 tablespoons ajvar
  • 2 tablespoons tomato paste
  • 2 tablespoons olive oil
  • 5 tablespoons of vinegar
  • 3 tsp Feta Love

 

Preparation:

  1. Prepare the bulgur according to the package directions. Finely chop the onion, garlic, bell pepper, and parsley.
  2. Pour olive oil into a pan and sauté the diced onion, garlic, and bell pepper briefly until the bell pepper is tender but still slightly crunchy.
  3. Mix the bulgur with the ajvar, tomato paste, the steamed vegetables, vinegar, and parsley, and let it cool to room temperature.
  4. Serve immediately or let it sit in the refrigerator overnight. If you're serving it right away, add the chopped cherry tomatoes, crumbled feta & "Feta Liebe" seasoning, pomegranate seeds, and lettuce just before serving, and mix everything well.
