Strawberry-Coconut Tiramisu
Do you love tiramisu as much as we do? We've got a fruity, summery tiramisu variation for you with strawberries and coconut. It's sure to be a hit at any garden party!
Ingredients for 4 servings:
Sponge Cake:
  • 100 g spelt flour 
  • 2 tsp baking powder 
  • 50 g coconut blossom sugar 
  • 30 g melted coconut oil 
  • 150 ml sparkling water
  •  Coffee or Amaretto (for brushing)
Cream:
  • 200 g whipping cream  
  • 300g skyr 
  • Vanilla extract 
  • Sweetener of your choice 
  • 2 tsp Pink Coco   
Decorations:
  • Strawberries  
  • Mint  
  • Pink Coco  
Instructions:
  1. Mix all the ingredients for the sponge cake batter and spread the mixture into a large baking dish. 
  2. Bake at 180°C for 20 minutes. 
  3. Let it cool, then cut it into 5x2 strips.  
  4. Place them in a baking dish and pour a little coffee and Amaretto (optional) over them so that they are completely covered.  
  5. Mix the ingredients for the cream. 
  6. Then layer the ingredients as follows: Start with the sponge cake, pour coffee or Amaretto over it, then add the cream, followed by strawberry slices, and repeat until all the ingredients are used up (we made 2 layers) 
  7. Garnish with strawberries, mint, and Pink Coco.  
  8. Refrigerate overnight or for at least 5 hours so that the sponge cake softens.
