Stuffed Sweet Potato

Here's a simple recipe for stuffed sweet potatoes just for you! With tomato salsa, guacamole, crumbled feta, and Sweet Couch Potato, you can give your sweet potatoes a Mediterranean twist.

Ingredients for 4 servings: 

  • 2 sweet potatoes
  • 1 red onion
  • 1 avocado
  • 1/2 lemon
  • 100 g feta
  • 250g cherry tomatoes
  • 2 tbsp olive oil
  • Sweet Couch Potato

Preparation: 

  1. Preheat the oven to 200 degrees using top and bottom heat.
  2. Wash the sweet potatoes and cut each one in half lengthwise. Prick the cut sides lightly with a fork. Brush the smooth side of the sweet potatoes with 1 tablespoon of olive oil.
  3. Bake the sweet potatoes on a rack in the oven for 30–40 minutes.
  4. While you wait, peel and pit the avocado, then mash it with a fork in a bowl.
  5. Add lemon juice and season to taste. Avocado Liebe goes well with this.
  6. Cut the cherry tomatoes and red onions into small pieces and toss them in a bowl with 1 tbsp olive oil.
  7. Remove the cooked sweet potato from the oven. Lightly prick the top with a fork and scrape out some of the flesh. Then season with Sweet Couch Potato.
  8. Stuff the tomatoes into the sweet potato and spoon the prepared guacamole on top.

  9. Finally, crumble the feta over the top and top it off with some more Sweet Couch Potato.
