Ingredients:
- 1/2 leek
- 300g chicken or vegan alternative
- 1 head of broccoli
- 1 bell pepper
- 2 carrots
- 1 can of coconut milk
- 1 red onion
- Better in a Jar: Creamy Curry Seasoning
Preparation:
- Cook the rice according to the package directions.
- Chop the vegetables and dice the onion.
- Sauté the chicken or alternative protein with the onions in a wok. Then add the vegetables and the Creamy Curry. Pour coconut milk over everything, adding a little water if needed, and let it cook and simmer together for about 5–10 minutes.
- Arrange the rice and the prepared curry on a plate.
