Ingredients for 4 servings:
- 300g rice
- optional: peanut oil
- 1 spring onion
- 2 bell peppers
- 1 mango
- 1 can of chickpeas
- 1 can of coconut milk
- Coconut-Mango Curry
Preparation:
- Cook the rice according to the package directions; while it's cooking, chop the vegetables.
- Sauté the vegetables in (peanut) oil. Deglaze with coconut milk.
- Season everything well with the coconut-mango curry.
