Ingredients for 4 servings:
- 200 g Beluga lentils
- 1 mango
- 1 avocado
- 2 bell peppers
- 1 small red onion
- 1 package of arugula
Orange-Mustard Dressing:
- Juice from 2 oranges
- 6 tablespoons light balsamic vinegar
- 2 tablespoons mustard
- 2 tablespoons olive oil
- Salt & Pepper
- 2 tsp Avocado Love

Cook the beluga lentils according to the package directions and let them cool.

Dice the remaining ingredients for the salad and wash the arugula.
