Roasted Vegetables with Feta

Everything tastes so much better with cheese on top, doesn't it? This baking sheet dish is the perfect way to use up any leftover vegetables you have in the fridge. Just top it with feta, and you're done!

Ingredients for 4 servings:

  • 600 g potatoes
  • 400g carrots
  • 400g kohlrabi
  • 400g beets
  • 300g bell peppers
  • 500g zucchini
  • 1 onion
  • (Or just anything else you have lying around)
  • a little olive oil
  • 400g feta
  • Love for Feta

 

Preparation: 

  1. Chop the vegetables into small pieces, spread them out on a baking sheet, and drizzle them with olive oil.
  2. Bake for about 35 minutes at 180°C, until the vegetables are tender.
  3. Sprinkle the feta on top as desired, either just before the end of the baking time or after it's done, and season with Feta Liebe.

Tip: It also tastes great with a homemade herb dip!
