Ingredients for 4 servings:
- 2 onions
- 1 clove of garlic
- 20 g ginger
- 1.5 kg sweet potatoes
- 4 tablespoons oil
- 800 g coconut milk
- 800 g broth
- Sweet Couch Potato
Preparation:
- Peel and finely chop the onion, garlic, and ginger. Peel the sweet potatoes and cut them into large cubes.
- Heat the oil in a pot and sauté the onions first, followed by the ginger, sweet potatoes, and garlic.
- Then add the coconut milk and broth and let it simmer for 30 minutes.
- Puree the soup and season it with Sweet Couch Potato.
