Sweet Potato Nachos

Do you still have ground meat in the fridge, but don't feel like making boring spaghetti Bolognese again? Then why not try something new with our sweet potato nachos! An exotic, filling baking sheet dish for the whole family.

Ingredients for 4 servings (one baking sheet):

  • 2 large sweet potatoes (800 g)
  • 400g ground meat
  • 3 large tomatoes
  • optional: fresh cilantro
  • Lime juice
  • 2 red onions
  • 3 tablespoons tomato paste
  • 2 cloves of garlic
  • 1 tablespoon olive oil
  • 1 can of black beans
  • 1 small can of corn
  • Jalapeños from the glass
  • 1/2 ripe avocado
  • 100 g shredded cheese for gratin
  • Sweet Couch Potato

 

 

Preparation:

  1. Preheat the oven to 220 degrees Celsius (top and bottom heat).
  2. Cut the sweet potatoes into thin slices. Pre-bake them in the oven on the top rack for 10–15 minutes.
  3. Peel and finely chop the onions and garlic cloves. Sauté half of the onion and the garlic cloves in a pan with a little olive oil. Then add the tomato paste and the ground meat.
  4. Rinse the black beans and corn thoroughly, then mix them into the ground meat in the pan.
  5. Sprinkle the baked sweet potato slices with Sweet Couch Potato. Then spread the ground meat mixture on top. Arrange jalapeño rings on top as desired and sprinkle with cheese.
  6. Place in the preheated oven and bake at 200 degrees for about 10–15 minutes, until the cheese has melted.
  7. Meanwhile, place the tomatoes, the remaining red onion, half of the cilantro, lime juice, and a little salt in a bowl. Blend everything into a chunky salsa.
  8. Cut the avocado in half, remove the pit, and dice it. Wash the cilantro thoroughly and tear it into small pieces with your hands. Spread it over the nachos along with the salsa, and enjoy!
