Lemon Cake with Flower Topping

You eat with your eyes first! That's why we top just about everything with our popular Flower Power! The edible flowers are especially great for baking and decorating—like here on this perfect spring cake. 

Ingredients for a 20-cm loaf pan:

For the dough:

  • 225 g spelt flour
  • 35 g cornstarch
  • 200 ml milk
  • 100 g sugar
  • 60 ml neutral oil
  • 50 ml lemon juice (juice from 1 lemon)
  • lemon zest
  • 8 g baking powder

For the topping:

  • Skyr
  • Flower Power

 

Preparation:

  1. First, mix all the dry ingredients together in a mixing bowl.
  2. Next, add the wet ingredients to the dry ingredients and mix everything well. Pour the batter into a 20-cm loaf pan lined with parchment paper and bake the lemon cake at 180 degrees (top and bottom heat) for about 40 minutes. Check for doneness with a toothpick!
  3. After baking, top with frosting or skyr, for example, and sprinkle with Flower Power
